Preperation
1 hour before you want to eatTake the filet's out of the fridge, put them on a plate and coat them ALL OVER in salt and pepper.
If you have never heavily salted steak before your eyes may get slightly wide at how much it looks like there is on there, do not worry it will taste delicious in the end. Ensure you salt and pepper all sides, not just top and bottom. It is important to leave the meat out, you want it to gradually rise and get close to room temperature when it is just about ready to go on the grill, that will ensure an even cook.
25 minutes before you want to eatTurn that grill on! Wait til it heats up and use that grill brush to ensure the grate is clean and ready to add some nice lines to your filets! When you place the filet's on the grill you want the heat hovering around 450 F.
17 minutes before you want to eatLet's start grilling.
Once again ensure that the grill is around 450 F, then put the filet's on the grill! Now what I do, with my grill I have one filet in the back, the other in the front.
I throw them on the grill, close the cover and head into the house and then proclaim "Hey Google, set a timer for two minutes." And let it be so.
The two minutes are up? "Hey Google, thanks." or "Hey Google, stop!" (depending on my mood, generally it's thanks because hey, steak is coming) then I liesurely head out to the grill (so generally this 2 min timing is more like 2:15-2:30). I open the grill cover (it's okay if the temperature went up a bit to like 475-500 but make sure the grill doesn't stay overly hot, a lot of the heat will disipate while rotating the steaks anyway) and take the one from the back rotate it 90 degrees and put it where the one in the front was, and same for the front one moving to the back.
- Close the cover, repeat the Google Home calls.
- Timer is up? This time I flip the steaks and do not move them from front to back.
- Close the cover, repeat the Google Home calls.
- Timer is up? Rotate 90 degrees and switch their positions back/front. Also this time, in the remaining space on the grill I place the ceramic plate.
- Close the cover, repeat the Google Home calls.
- Timer is up? Turn off the propane, shut off the grill dials (in that order generally), place the steaks on the plate, and use the oven mitt to bring the plate in the house.
Now I cover that plate in aluminium foil for 5-7 mins. (This is key in my opinion)
The moment you have been waiting for!Time to feast!
Other Notes
And that's all he wrote folks! My fiancée and I add the bleu cheese crumbles over it and chow down. If you like opening your airways, add some spicy horseradish on the side but that and the worcheshire is not really necessary.
Here are additional sides to include as well!
- Warmed Garlic Spread
- Mushrooms and Onions
Buying good steak can be expensive, but if you learn to cook it right and want a nice meal all you have to do is think of the money you save with a bit of prep and grilling at home. We get filet's that are around $23.99 lb and each one is about 1/2 lb, which is the right amount of steak for us so it works out very well. Yeah, generally I balk at meat priced so high, but honestly this is Filet Mignon, if you go out to a restaurant and get it? What, at a minimum it'll be $25 for a half pound, so you are already doubling your quantity without even the added cost of an tip for your server!
Pairs well with
