Preperation
1 hour 30 minutes before you want to eatWash off the potatoes. Cut the potatoes into pieces that are around 3/4 in. in width. I try to not just do cubed cutes, I like to keep it interesting.
Important Note: If you cut the potatoes more than the 90 minutes out indicated then submerge them in water to prevent browning. Having cooked them both presoaked and right after cutting / prepping, I recommend presoaking them. They will cook fine and have that crispy outside and when you bite in they will not be dried out.
1 hour before you want to eatDrain the potatoes if you submerged them. Throw some olive oil on the potatoes (a few tablespoons, if a lot of potatoes then add more) then proceed to salt & pepper, onion, garlic, chili powder and peprika to taste. This is a bit vague on amounts because of potato quantity but if you haven't ever made this before start with a tablespoon of the onion & garlic powders, a teaspoon of the chili powder and peprika.
53 minutes before you want to eatPreheat the oven to 400 degrees F. Note: This timing all depends how long it takes for your oven to heat up to 400 degrees F.
45 minutes before you want to eatLine your baking tray with aluminium foil (easy cleanup!) and spread the potatoes around the tray evenly. Pop the tray into the oven and set a timer for 20 minutes.
25 minutes before you want to eatTake out the potatoes and what I do is actually add a bit more salt to them at this point, as it ever so slightly helps in preventing them from sticking to the foil. Shuffle them around after the salt is on them and pop them back in the oven for 20 minutes.
5 minutes before you want to eatTake out the potatoes, shuffle them around and let them cool down. Turn off the oven.
The moment you have been waiting for!Enjoy your potatoes!
Other Notes
And that's all he wrote folks! My fiancée and I pair this with the filet mignon recipe, it is certainly not a balanced meal at all, but hey, it sure is delicious!
